Ingredients for 2 servings:
- 5 potatoes, mainly waxy
- 100 g diced ham
- 2 eggs
- Salt and pepper from the mill
- some parsley
- 1 pinch(s) paprika powder
- some margarine (frying margarine)
- 1 small onion(s)
- possibly crème fraîche

delicious and quick homemade
Peel the potatoes and cut into thin slices. The thicker the slices, the longer they will take to fry. Peel the onions and dice them finely. Add the frying margarine to the heated pan and the potato slices. The pan shouldn’t be too hot, or the potato slices will stick to the bottom of the pan. Fry the slices until golden brown, then add the diced ham and a pinch of salt and pepper. Next, lightly beat the eggs in a cup (until air bubbles form), which will make the mixture more fluffy. Add a pinch of paprika to the beaten eggs, then add the whole thing to the pan, stirring constantly. Now add the diced onions. Chop the parsley and add it to the pan. If desired, you can also add a little more crème fraîche (about 100g) at the end. The fried potatoes also make a great side dish.
