Ingredients
- 10 Jacket potatoes cooled
- 2 Onions
- 3 tablespoon Tomato paste
- 6 Dried tomatoes in oil
- 100 ml Water
- Oil
- 2 teaspoon Sugar or agave syrup
- 2 teaspoon Sweet paprika
- 2 teaspoon Cayenne pepper
- Salt and pepper
Instructions
- Peel the potatoes and cut them into pieces. Cut the onions and the sun-dried tomatoes into small cubes.
- Heat some oil in a pan and fry the potatoes for about 5 minutes. Then add the sliced onion and fry for another 2 minutes.
- Add the tomato paste and the dried tomatoes and stir well. Finally add the water and the spices and mix everything well. Season to taste with salt and pepper.
