Ingredients for 4 servings:

  • 250 g rice, pre-cooked, cooled (preferably from the day before)
  • 2 eggs
  • ½ tsp salt
  • oil
  • 2 spring onions, cut into rolls
  • ½ bell pepper(s), red, finely diced
  • 100 g peas, frozen, thawed
  • 200 g ham, raw or cooked, finely diced
  • 2 tbsp peanuts, salted
  • 1 tbsp soy sauce
  • Sambal Oelek

great use of leftovers

Rub the rice between wet hands to separate all the grains. Beat the eggs with salt, fry them into a flat pancake, cut into strips, and set aside. Sauté the vegetables in oil in a wok for two to three minutes, add the ham and continue frying briefly, stirring in the nuts. Add the rice and heat until hot. Season with soy sauce and sambal oelek, fold in the egg strips, and heat until hot. This is a great way to use up leftovers; any vegetable can be substituted for another. You can also use crab or fried chicken breast instead of the ham.
