Fried rice with cashew nuts

Ingredients for 2 servings:

  • 180 g basmati rice
  • 1 bell pepper(s), red
  • 1 onion(s), red
  • 1 small zucchini
  • 1 garlic clove(s)
  • 1 pepper, red
  • 1 carrot(s)
  • 2 tbsp soy sauce
  • 3 tbsp cashew nuts
  • e.g. salt and pepper
  • Sesame oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

vegetarian fried rice

Cook the rice according to the instructions. Dice the bell pepper, onion, and zucchini. Finely chop the garlic clove and chili peppers. Thinly slice the carrot. Heat sesame oil in a pan. Roast the vegetables and chili peppers and deglaze with the soy sauce. Add the garlic and rice and fry until the rice starts to brown. Season with salt and pepper. If using salted cashews, be careful with the salt; we used none at all. Add the cashews at the end and serve immediately.
