Fried sage leaves in a beurre noisette

Ingredients for 2 servings:

  • 10 sage leaves
  • 100 g butter
  • 25 g Parmesan

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Goes wonderfully with gnocchi

Gently heat the butter in a pan until it reaches the beurre noisette stage. The butter will then be a beautiful golden brown and very hot. Be careful! Immediately add the sage leaves to the pan and ensure they are covered with butter. Be careful not to overcook them, as the leaves will quickly brown and the butter will eventually turn black. When the leaves are crispy, the sauce is ready. Pour over freshly cooked, hot gnocchi and grate freshly over the Parmesan cheese.
