Two kinds of quark with peaches and lemon balm

Ingredients for 2 servings:

  • 250 g low-fat curd cheese
  • 1 gr. can/n peach(s) (465 g drained weight)
  • 4 ladyfingers (or amaretti biscuits in a similar quantity)
  • 5 sprigs lemon balm
  • 2 tbsp sugar
  • 1 tsp vanilla sugar (or even better: the pulp of a quarter of a vanilla pod)

Working time approx. 15 minutes; Total time approx. 15 minutes

For two to eat your fill

Drain the peaches, reserving the juice. Cut the peaches into very small pieces. Wash the lemon balm, pat it dry, and pick off the leaves. Finely chop it in a blender with a tablespoon of sugar, then add half of the quark and blend again. Add a good splash of peach juice; the cream should have a consistency roughly the consistency of yogurt. Blend again until the cream is a nice green, then set aside. Mix the remaining quark with a tablespoon of sugar, a teaspoon of vanilla sugar (or vanilla seeds), and a little peach juice until smooth and creamy. Now place 4-5 tablespoons of peaches into large latte macchiato glasses, add a tablespoon of the light quark cream to each, then spread the entire green quark cream on top. Then break the ladyfingers into small pieces (break the amaretti biscuits once) and arrange them on top of the green cream. Add more white cream and the rest of the peaches on top. Decorate with a few lemon balm leaves!
