Fried salmon fillet in tomato, zucchini and pepper sauce

Ingredients for 2 servings:

  • 2 salmon fillets
  • 1 tbsp oil
  • 1 onion(s)
  • 250 g tomatoes, fresh or from a can
  • 1 small zucchini
  • 1 red bell pepper(s)
  • 2 tbsp tomato paste
  • 1 pinch(s) of sugar
  • 2 tbsp fresh herbs (oregano, thyme, basil, marjoram)
  • e.g. salt and pepper
  • e.g. chili

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Peel and chop the onions. Wash and chop the zucchini. Wash, deseed, and chop the bell peppers. Wash and chop the herbs. Sauté the onions until translucent, add the zucchini and bell peppers, and sauté briefly. Chop the tomatoes and add them to the vegetables. Add the tomato paste, sugar, and herbs, and simmer for 10 minutes. Season with chili, salt, and pepper. Fry the salmon fillet in oil, transfer to plates with the vegetable sauce, and serve with rice or potato pancakes.
