Ingredients for 1 servings:

  • 100 g whole wheat flour
  • 100 ml water
  • 4 g fresh yeast
  • 200 g pre-dough
  • 200 g wholemeal flour (wholemeal oat flour)
  • 300 g wheat flour type 550
  • 6 g fresh yeast
  • 10 g salt
  • 200 ml water

Instructions

Working time approx. 20 minutes; Rest time approx. 14 hours; Cooking/baking time approx. 20 minutes; Total time approx. 14 hours 40 minutes

Make a pre-dough from 100 g wholemeal wheat flour, 4 g yeast, and 100 ml water and let it rise overnight. For the main dough, knead the pre-dough with 200 g wholemeal oat flour, 300 g wheat flour, 6 g yeast, 200 ml water, and salt until the dough has a good structure and is no longer sticky. Form the dough into rolls and let them rise for about 1 hour. Preheat the oven to 230°C and bake the rolls for 15-20 minutes. Let cool.
