Salmon in spinach and cheese sauce

Ingredients for 2 servings:

  • 4 salmon fillets, frozen
  • 1 stalk(s) leek
  • 300 g spinach, frozen, portioned
  • 250 g cocktail tomatoes
  • 2 tbsp processed cheese, natural, light
  • 100 ml vegetable stock
  • salt and pepper
  • 1 tbsp oil

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Thaw the frozen salmon fillets for about 1 hour. Slice the leek into rings and fry in a pan with a little oil. Add the salmon to the pan, turn after two minutes, and deglaze with about 100 ml of vegetable stock. After 5 minutes, add 3 tablespoons of processed cheese, stir in, and add the frozen spinach. Cover and simmer for 6-7 minutes, seasoning with salt and pepper to taste. Finally, halve the cherry tomatoes and add them. Heat briefly for 3 minutes.
