Ingredients for 1 servings:
- 500 ml milk
- 250 g semolina
- 6 eggs (size M)
- 1 tbsp butter
- 1 pinch(s) of salt, possibly more, to taste
- 1 pinch of nutmeg
- e.g. oil for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Soup garnish
Bring the milk to a boil, melt the butter, and sprinkle in the salt and semolina, then cook until a very thick paste forms. Season with nutmeg and let cool. Using a hand mixer or food processor, thoroughly beat in the eggs one at a time. Using two teaspoons, form dumplings and fry them in hot oil until slightly darker than golden brown. This yields approximately 65-70 ping-pong ball-sized dumplings. For our three-person household, I always make half the recipe and freeze the rest.
