Fried shrimp with broccoli

Ingredients for 4 servings:

  • 300 g shrimp(s), raw, peeled
  • ½ tsp sesame oil, dark
  • Salt
  • 1 egg(s)
  • 500 g broccoli (florets)
  • 20 g ham, cooked without rind
  • 1 sprig(s) coriander, alternatively flat-leaf parsley
  • 1 slice(s) of ginger, about 1 cm thick
  • 2 tbsp vegetable oil, neutral for frying
  • 2 tbsp sesame seeds, white, unhulled
  • 2 tsp sugar
  • 300 ml oil, for frying
  • 6 tbsp cornstarch
  • 1 ½ tbsp sauce (Sha-Cha sauce)

Long Feng Xia Qiu

Wash the prawns and dry them thoroughly. Mix the sesame oil with a pinch of salt and the egg in a bowl. Fold in the prawns and let them stand for 20 minutes. Meanwhile, clean the broccoli and cut into small florets, peel the stalks and slice them. Blanch the broccoli in plenty of salted water for 3 minutes. Remove from the pot immediately and refresh in iced water. Drain well in a sieve. Chop the ham very finely. Wash the coriander or parsley, shake dry and chop very finely. Peel and finely chop the ginger and keep it separate from the ham and coriander. Preheat the wok, add a little oil and toast the sesame seeds over medium heat for 2 minutes, stirring, then add the ham and coriander, toss to coat and remove from the pan. Wipe the wok with a kitchen towel, then add 1 tablespoon of oil and fry the ginger for 1 minute. Add the broccoli and fry briefly, stirring. Season with 1 pinch of salt and 1 teaspoon of sugar and stir thoroughly. Transfer the broccoli to a plate and keep warm. Add frying oil to the wok and heat until hot. Remove the shrimp from the egg and coat them in cornstarch on a plate, then fry in batches in the hot oil. Remove the fat from the shrimp on a kitchen towel. Mix the “Sha-Cha” sauce with 1/2 tablespoon of water, 1 pinch of salt, and 1 teaspoon of sugar. Pour the oil from the wok until a thin film remains. Add the shrimp to the wok and drizzle with the seasoning sauce. Stir-fry for a few seconds over high heat. Remove the shrimp and arrange them on top of the broccoli. Sprinkle with the ham and sesame mixture to serve. TIP: If you can’t find the “Sha-Cha” sauce, you can substitute it with the Chinese chili sauce with peanuts, “Lag Gan Ma,” or omit it altogether if you are allergic to peanuts.
