Ingredients for 2 servings:

  • 500 g squid
  • 8 garlic cloves
  • 4 sprigs of leaf parsley
  • 2 tbsp olive oil

Clean the squid thoroughly. Remove the “stick” and scoop out the innards. Wash thoroughly. Peel off the purple skin—this is very easy with small fish—and dry thoroughly. Roughly chop the garlic and parsley. Heat a pan. Then fry the squid without oil. This method prevents water from forming. When the fish is lightly browned, add oil, garlic, and herbs and cook. These small squid are ready in no time. Don’t overcook, or they will dry out. After about 5 minutes, the fish is truly cooked. Serve with aioli, salad, and even white bread. This is another quick, no-fuss holiday dish. Anyone who likes these delicious fish will love this recipe.
