Fried smelt

Ingredients for 2 servings:

  • 12 fish(s) (smelt), ready to cook
  • 20 g bacon, well marbled, finely chopped
  • 100 g fat (clarified butter or oil)
  • 2 rolls, stale, bone dry
  • salt and pepper
  • 1 lemon(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Smelts are only available in early spring – seasonal recipe

Grind the bread rolls into fine breadcrumbs using a food processor. Heat the fat in a sufficiently large frying pan and sauté the bacon cubes. Wash the smelt, pat dry, season with salt and pepper, coat in the breadcrumbs, and fry in the pan until golden brown. Remove with a slotted spoon and serve with lemon wedges.
