Nettle leaves in beer batter

Ingredients for 4 servings:

  • 20 leaves nettle, large fresh
  • 125 g flour
  • 2 eggs
  • 125 ml beer
  • some lemon juice
  • 1 tbsp oil for the dough
  • Clarified butter or oil for frying
  • Salt

Instructions

Separate the eggs. Beat the egg whites of one egg until stiff peaks form. Make a smooth batter with the flour, beer, 2 egg yolks, oil, and a pinch of salt. Fold in the stiffly beaten egg whites. Wash the large, fresh nettle leaves, dry them, flour them, and dip them into the beer batter. Then fry them in hot oil at 160°C until golden brown. Drain on kitchen paper and serve warm, drizzle with a little lemon juice.
