Ingredients for 4 servings:
- 1,000 g fish fillet(s), possibly bream
- 250 g spring onion(s), finely chopped
- 6 garlic cloves, finely chopped
- e.g. soy sauce
- 1 lemon(s), the juice
- 2 tbsp fish sauce
- 1 tsp black pepper, medium ground
- 1 pinch(s) brown sugar
- 3 chili peppers, fresh, red, pitted, finely chopped
- 1 tbsp coriander greens, finely chopped
- 1 tbsp basil, chopped
- Oil (peanut oil) for frying
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Clean the fish fillets, drizzle with lemon juice, and lightly salt. Fry on both sides in hot peanut oil and keep warm on a platter. Sauté the spring onions and garlic in the pan juices with another splash of peanut oil until softened. Season with soy sauce, black pepper, fish sauce, and a pinch of brown sugar. Simmer gently for a few minutes. Pour the hot, seasoned sauce over the fish fillets. Top with chili cubes, and scatter with cilantro and basil. Serve with glass, rice, or Thai fried wheat noodles.
