Fried rice with tomatoes

Ingredients for 4 servings:

  • 2 onions
  • 3 spring onions
  • 3 tomatoes
  • 300 g rice
  • 2 tbsp oil
  • 2 tbsp fish sauce
  • 1 tbsp tomato ketchup
  • 1 tsp sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Khao Pad

Bring water to a boil in a pot and add the rice. Simmer uncovered for 10 minutes, then drain the remaining water. Allow the rice to cool slightly. While the rice is cooking, dice the onions, cut the spring onions into approximately 2cm pieces, and dice the tomatoes. Heat the oil in a wok or frying pan, add the onions, and fry briefly. Add the tomatoes and spring onions and fry briefly. Then add the rice, stir well, and fry until very hot. Season to taste with fish sauce, ketchup, and sugar. Tip: Fried rice is also delicious cold and will keep well in the refrigerator for one or two days. You can also fry a finely chopped clove of garlic along with the onion.
