Fried vegetable rice with egg

Ingredients for 2 servings:

  • 3 eggs
  • ½ bell pepper(s), yellow
  • ½ red bell pepper(s)
  • ½ bell pepper(s), green
  • 1 carrot(s)
  • ½ stalk(s) leek
  • 1 cup(s) rice, approx. 125 g
  • some oil for frying
  • some salt and pepper
  • 2 cup(s) water for the rice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Asian-inspired vegetable stir-fry

Prepare the rice according to the package instructions. Meanwhile, slice the bell peppers into small strips. Slice the leek into rings and grate the carrots. Whisk the eggs and fry while stirring. Remove the scrambled eggs from the pan and fry the vegetables in the same pan, working in batches if necessary. When the rice is done, fry it for about 5 minutes while stirring. Finally, add everything to the pan, mix well, fry for another minute, and season with salt and pepper.
