Fried Yellow Rice in Wok

The perfect fried yellow rice in wok recipe with a picture and simple step-by-step instructions.

Yellow basmati rice:

  • 250 g Basmati rice (makes approx. 600 g when cooked)
  • 1 tsp Salt
  • 1 tsp Ground turmeric

Eggs:

  • 4 piece Eggs
  • 1 tsp Salt
  • 1 tsp Ground turmeric
  • 1 tbsp Cooking cream
  • 2 tbsp Sunflower oil

Beef meat

  • 500 g Beef meat
  • 1 tbsp Sunflower oil
  • 1 tsp Salt
  • 1 tbsp Mild curry powder

Vegetables:

  • 150 g 1 Zwiebel
  • 150 g 2 Möhren
  • 150 g Bean sprouts
  • 50 g Spring onions
  • 2 piece Garlic cloves
  • 2 piece Small, green chili peppers
  • 1 piece Ginger the size of a walnut
  • 4 tbsp Sunflower oil
  • 2 tbsp Dark soy sauce
  • 1 tbsp Mild curry powder
  • 100 ml Clear broth (1 teaspoon instant broth)
  • 1 Cup Freshly cut coriander

Serve:

  • Coriander leaves for garnish
  • Sweet chili sauce

Yellow basmati rice:

  1. Wash basmati rice (250 g), bring to the boil in water (450 ml) with salt (1 teaspoon) and turmeric (1 teaspoon), stir, cook with the lid closed at the lowest temperature for approx. 20 minutes and allow to cool.

Eggs:

  1. Beat the eggs and whisk with salt (1 teaspoon), turmeric (1 teaspoon) and cooking cream (2 tbsp). Heat sunflower oil (2 tbsp) in a pan, bake 2 egg cakes from the egg mixture, remove and tear into small pieces.

Beef meat:

  1. Heat sunflower oil (1 teaspoon) in a pan, fry the beef in it until crumbly and season with salt (1 teaspoon) and mild curry powder (1 tbsp).

Vegetables:

  1. Peel and quarter the onion, assemble and cut into fine strips. Wash bean sprouts and drain well. Peel the carrots with the peeler, cut into pieces approx. 5 cm long and then cut into slices and the slices into fine sticks. Clean and wash the spring onions and cut diagonally into pieces. Peel and finely dice the garlic cloves and ginger. Clean / core the chilli peppers, wash and finely dice. Wash the coriander, shake dry and cut finely.

Fried yellow rice in a wok:

  1. Heat sunflower oil (4 tbsp) in a wok, add the vegetables (garlic clove cubes, ginger cubes, chili pepper cubes, onion strips, bean sprouts, carrot sticks and spring onion pieces) one after the other and fry / stir-fry. Season with dark soy sauce (2 tbsp) and mild curry powder (1 tbsp). Add / fold in the seared beef meat and the cooked yellow basmati rice. Deglaze / pour in the clear broth (100 ml). Finally add / fold in the egg pieces and the cut coriander.

Serve:

  1. Serve fried yellow rice in a wok with a sweet chili sauce, garnished with coriander. Serve with sweet chili sauce.
