Fried zucchini with smoked salmon

Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 3 tbsp walnut oil
  • salt and pepper
  • 200 g smoked salmon slices
  • lemon juice
  • 3 tsp horseradish

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Slice the zucchini and fry in a hot pan in oil until lightly browned. Season with salt and pepper, and arrange on plates. Place the smoked salmon on top of the warm zucchini, drizzle with a few squeezes of lemon juice, and sprinkle a little horseradish on each salmon.
