Frisian pear soup

Ingredients for 4 servings:

  • 400 g smoked bacon or bacon
  • 500 ml water
  • 500 g pear(s)
  • 100 g raisins
  • ½ liter buttermilk
  • 2 tbsp flour
  • 3 tbsp sugar

First, bring the bacon to a boil in a pot with half a liter of water. Simmer in a covered pot for about 2 hours. In the meantime, peel the pears, halve them, and core them. Cut the pears into thin strips. Once cooked, remove the bacon from the broth and cut into equal-thick slices. Add the pears and raisins to the broth in which the bacon was previously cooked. Simmer the pears and raisins there for 10 minutes. In the meantime, put the buttermilk and flour in a pot and stir well to avoid lumps. Add the sugar. Bring everything to a boil, stirring constantly. Then pour the broth and fruit into the buttermilk mixture and simmer for another 10 minutes at a low heat. Do not return to the boil! Before serving, divide the bacon slices between four deep plates and pour over the hot pear soup. Serve immediately.
