Frittata with peas and arugula

Ingredients for 4 servings:

  • 6 eggs
  • 200 g peas
  • 150 ml sweet cream
  • 2 pinches of salt
  • 2 pinches of pepper
  • 1 tbsp olive oil
  • ½ bunch arugula
  • 1 onion(s) or shallot
  • 1 thick garlic clove(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat the oven to 200°C. Finely dice the garlic and onions and fry in olive oil until translucent. Roughly chop the arugula and fry briefly. In a bowl, mix 6 eggs with the cream. Stir in the onions, garlic, peas, and arugula, and season with salt and pepper. Let the mixture thicken briefly in a pan. Bake in the oven (200°C) for 15-20 minutes.
