- 3 Pc. Apples
- 50 g Walnuts
- 650 g Sugar
- 200 g Nut mix
- 50 g Butter
- 100 g Oatmeal
- 20 g Cranberry
- The day before, heat the milk to 90 ° C in a saucepan and cook for 10 minutes while stirring. Let the milk cool to 45 ° C and stir in 100 ml with a whisk. Wrap the pot with the lid in a towel and let stand for 12 hours. Then pour the mixture into glasses and put in the refrigerator for at least 5 hours. For the muesli, knead the nut mixture with the cranberry, oat flakes and the butter. Spread thinly on a baking sheet and bake at 180 ° C top / bottom heat for about 15 minutes until crispy. Peel, halve and core the quince. Arrange the bowls on the bottom of a saucepan. Place the quince halves on the bowls and cover with 600 g sugar. Spread the seeds on the quince halves and the sugar. Peel and dice the beetroot and add to the pot to color. Add 400 ml of water to the pot and simmer for 1 hour with the lid closed. Peel, core and slice apples. Caramelize 50 g sugar in the pan, add apples and walnuts. Cook the apple-nut mixture with constant turning. Pour the yogurt from the glasses into a bowl, mix with 50 ml of cream and 50 g of powdered sugar (sifted) and place in the ice machine for ½ hour.
