Ingredients for 1 servings:

  • 500 ml yogurt (gourmet yogurt)
  • 80 g sugar
  • 1 pack of vanilla extract (liquid)
  • 4 egg whites

Instructions

Working time approx. 10 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 10 minutes

Pour the yogurt into a sieve lined with a thin cloth (kitchen paper works well). Cover with cling film, weigh it down with a plate (or better yet, place something heavy on the plate), and let it drain for at least six hours. The yogurt should now have the consistency of firm curd cheese. Now thoroughly mix the yogurt mixture, sugar, and vanilla extract. Beat the egg whites until stiff and fold in. Freeze in the ice cream maker according to the instructions.
