Ingredients for 1 servings:

  • 1 m.-sized watermelon(s)
  • 1 carambola (star fruit)
  • 1 handful of strawberries
  • 1 handful of blueberries
  • 1 pear(s)
  • 1 pack of whipped cream (Schlagfix), vegan
  • 1 handful of physalis
  • 1 bar of dark chocolate, vegan
  • 1 bar of white vegan chocolate

Working time approx. 30 minutes; Total time approx. 30 minutes

Vegan, no baking

Cut straight across the top and bottom of the melon so that you have two horizontal surfaces parallel to each other. Now cut the rind all the way around, so you have a cake pan. Now prepare the remaining fruit. Cut the pear into very thin wedges, the star fruit into slices, and the strawberries into quarters. Place the chocolate in a freezer bag and melt in the microwave. 30 seconds at 600 W, then 20 seconds, then 10. Knead briefly in between (for the white one, only 30 + 10 seconds). Now whip the whipped cream with a hand mixer. Then, using an angled spatula, spread the cream onto the melon and garnish with the fruit as desired. You can also use other fruits if you like. Now, decoratively spread the melted chocolate over the “cake.” This summer, this “fruit cake” is always a hit on the cake table, even among non-vegans.
