Fruit cake with sour cream topping

Ingredients for 1 servings:

  • 100 g butter or margarine
  • 100 g sugar
  • 100 g flour
  • 2 eggs
  • 2 tsp baking powder
  • 250 ml juice (fruit juice)
  • 1 packet of vanilla pudding powder
  • 1 jar sour cherries, gooseberries or similar
  • 3 egg whites
  • 3 egg yolks
  • 1 ½ cups sour cream
  • 1 tbsp sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Make a batter from butter, sugar, flour, eggs, and baking powder. Pour the batter into a prepared springform pan. Bake in a preheated oven at 180°C (top/bottom heat) for approx. 15-20 minutes. Cook the fruit juice with the vanilla pudding according to the package instructions. Fold in the fruit. Pour the mixture onto the prebaked base and bake in the prebaked oven for another 15 minutes. Beat the egg whites until stiff peaks form. Mix the egg yolks and sour cream with the sugar, then fold in the beaten egg whites. Spread this mixture onto the prebaked base. Return to the prebaked oven and bake for another 15 minutes.
