Fruit polenta

Ingredients for 4 servings:

  • 500 ml milk
  • 500 ml water
  • 250 g polenta
  • 30 g butter
  • 50 g sugar, or as desired
  • Fruits, to taste, e.g. cherries, apples, peaches,…

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Bring the milk, water, and butter to a boil. Slowly add the polenta semolina and simmer for about 15-20 minutes until smooth. Don’t forget to stir. In the meantime, prepare the fruit by washing, pitting, chopping, etc. I always use about 1/2 jar of cherries or 1/2 jar of applesauce for the specified portion, but it depends on the variety and the amount available; it’s hard to say exactly. Sweeten the finished polenta porridge with sugar and add cinnamon if desired. Then pour half of the polenta into a baking dish, layer the fruit on top, and then the rest of the polenta. If you like, you can put the fruit polenta in the oven (grill) for a few more minutes at 250 degrees Celsius.
