Fruity "Angry Birds" cake

Ingredients for 1 servings:

  • 1 tbsp water
  • 100 g sugar
  • 3 m.-sized eggs
  • 100 g flour
  • ½ pack of baking powder
  • 4 tbsp vegetable oil
  • 1 packet of vanilla sugar
  • Raspberries or strawberries, fresh
  • Blueberries, fresh
  • 1 banana(s)
  • 2 tbsp strawberry jam
  • 1 can of tangerine(s)
  • 1 pack of cake glaze, clear

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 3 hours 15 minutes

Fruit cake, for a round shape

For the base, mix the water with the sugar, vanilla sugar, and eggs with a mixer for about half a minute. Then, stir in the flour and baking powder until creamy. Finally, add the vegetable oil and mix well. Pour the batter into a greased round springform pan. (For the cake in the photo, I used a 21 cm diameter pie plate—this made the base a bit higher.) Bake at 180 degrees Celsius on the middle rack for 15 minutes. Once the cake has cooled, spread with strawberry jam. Alternatively, you can use vanilla or cream pudding, but this will reduce the cake’s fruity texture. Now, add the fruit to the thinly spread jam. Your imagination is the only limit. I chose the “Red” motif for my cake. It’s best to cut the fruit to size so they form a beautiful pattern. Finally, add a clear glaze. Prepare the glaze as directed on the package. The cake can then be refrigerated for about two hours to cool and set. This cake is a real eye-catcher for any children’s birthday party or Angry Birds fan!
