Fruity celery salad

Ingredients for 4 servings:

  • 300 g celeriac
  • 0.3 liters of water
  • 6 tbsp vinegar (herb vinegar), not higher quality
  • 4 slices of pineapple
  • 1 small can/mandarin orange(s)
  • 5 tbsp mayonnaise
  • salt and pepper
  • some lemon juice
  • some parsley

Instructions

Working time approx. 30 minutes; Rest time approx. 13 hours; Total time approx. 13 hours 30 minutes

Cut the celery into fine julienne strips. Bring the water to a boil with 1 teaspoon of salt and the vinegar, add the celery, and simmer gently for about 5 minutes. Let it steep in the pot until the next day. (If you’re short on time, you can also use pickled celery from a jar.) Finely chop the fruit and mix it with the mayonnaise, lemon juice, pepper, and salt. Mix with the drained celery. Then let it steep for another hour. Season to taste, adding more vinegar and salt if desired. Sprinkle with parsley when serving.
