Fruity chicken liver - sage - skewers

  • 125 g Chicken liver
  • 6 Dried apricots
  • Sage leaves fresh
  • 3 tbsp Olive oil
  • 0,5 tsp Rubbed marjoram
  • 0,5 tsp Thyme dry
  • 2 Shish kebab skewers
  • Pepper and salt

Apple - thyme - potato - puree

  • 150 g Potatoes
  • Salt
  • Butter
  • Warm milk
  • Nutmeg
  • 0,5 Apple fresh
  • Fresh thyme

Serving

  • Fresh thyme

Instructions
 

Fruity chicken liver - sage - skewers

  • Wash, dry and cut the liver into cubes. Water the kebab skewers. Wash the sage and shake dry. Put the liver on the skewers alternately with apricots and sage leaves.
  • Mix the oil with marjoram and thyme. Brush the skewers with the mixture. Put in the fridge and let steep for 15 minutes.
  • Fry the skewers in a coated pan without adding any additional fat. Season with pepper and salt.

Apple - thyme - potato - puree

  • Peel, wash and dice the potatoes. Cook in boiling salted water. Pouring off. Add butter. Puree with some warm milk. Season with nutmeg.
  • Peel the apple, remove the core and grate coarsely. Wash the thyme, shake dry, pluck the leaves off. Mix the apple and thyme into the mashed potatoes.

Serving

  • Arrange the puree together with the skewers on a plate. Garnish with thyme.
