Fruity chicken salad

Ingredients for 4 servings:

  • 1 chicken or soup chicken
  • ½ jar Miracle Whip with yogurt
  • ½ cup crème fraîche
  • 5 tbsp olive oil
  • 1 cup milk (small cup)
  • 1 can of tangerine(s)
  • 1 jar mushrooms, sliced
  • Salt
  • pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Chicken salad

Simmer the chicken in a pot of water for about 2 hours until cooked through. Then immediately peel off the skin. Remove the breast meat and leg meat and let cool. In a bowl, mix the Miracle Whip and crème fraîche with olive oil. Then add the milk to achieve the desired consistency. Drain the mandarin oranges and reserve the juice. Add a little of the juice to the mayo cream (careful – not too much, otherwise the sauce will be too thin). Season to taste with salt and pepper. Drain the mushrooms and let them drain well. Now cut the chicken into small pieces or cubes and mix into the cream, along with the mushrooms and mandarin oranges. Mix everything together and let it sit in the refrigerator overnight. The salad can also be eaten immediately.
