Fruity Coleslaw with Apple

Ingredients for 6 servings:

  • ½ white cabbage
  • 1 onion(s), red
  • 3 carrots
  • 1 apple
  • 2 tsp mustard, hot
  • ½ lemon(s)
  • 1 tbsp, heaped mayonnaise
  • 1 tbsp sugar
  • salt and pepper
  • ½ bunch flat-leaf parsley

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cut out the stalk of the white cabbage and remove the outer leaves. Peel the onion and carrots. Wash the apple, peel it if desired, and remove the core. Cut all ingredients by hand into the thinnest strips possible, but you can also use a food processor with the appropriate attachment if necessary. For the dressing, mix the mayonnaise with lemon juice, mustard, and sugar and season with salt and pepper. Remove the parsley stalks and roughly chop the leaves. Mix the dressing with the lettuce and the roughly chopped parsley leaves in a bowl. Let the salad marinate in the refrigerator for a good hour and season again with salt and pepper before serving, if desired. Perfect with pulled pork!
