Winter broccoli salad

Ingredients for 4 servings:

  • 300 g yogurt
  • 60 g honey, liquid
  • 1 pinch of cinnamon
  • Lemon juice, to taste
  • 500 g broccoli
  • 1 apple
  • 1 pear(s)
  • 1 banana(s)
  • 30 g almonds, sliced

Crispy salad with fruit and lots of iron

Mix together a dressing from yogurt, honey, cinnamon, and lemon juice. Roast the almond flakes in a dry pan until golden brown and fragrant, then let them cool on a plate (otherwise they will continue to brown in the pan). Wash the broccoli in salted water (this will release the “little critters”) and divide them into small florets. Peel the stalks and slice everything into fine strips, then add them to the dressing. Peel the apple and pear – depending on your taste and appearance – then slice them into fine strips and stir them into the dressing (this prevents them from browning). Peel the banana and cut it into thin slices, then carefully fold them into the salad. Transfer to a plate and garnish with the almond flakes.
