Fruity radicchio and fennel salad

Ingredients for 4 servings:

  • 1 head of radicchio
  • 1 fennel
  • 3 carrots
  • 2 oranges
  • 1 handful of walnuts
  • 2 tbsp red wine vinegar
  • 2 tbsp oil, e.g. garlic oil
  • salt and pepper
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Colorful vitamin kick, crunchy and very tasty

Wash and trim the radicchio and fennel. Halve and cut into thin strips. Peel the carrots and cut into julienne strips. Segment the oranges and reserve the juice. Stir the vinegar into the orange juice and season the dressing with salt, pepper, and sugar. Stir in the oil and toss the fennel, radicchio, and carrots with the dressing. Chop the walnuts. Arrange the orange segments on the salad and sprinkle the salad with the chopped walnuts. A delicious starter or side dish for 4 people. A main course with bread for 2 people.
