Fruity sauce with cranberries

Ingredients for 1 servings:

  • 500 ml stock (duck or game stock)
  • 2 tbsp balsamic vinegar
  • 80 ml crème de cassis
  • 2 tsp jelly, black currant
  • 2 tbsp sugar
  • 100 g cranberries, fresh
  • some cornstarch
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Sauce for game or duck

Heat the stock, add the balsamic vinegar, cassis, jelly, and sugar. Bring everything to a boil. Add the cranberries and cook until the berries burst. This happens quite quickly. Alternatively, you can use dried cranberries. Thicken with cornstarch and season with salt and pepper. This sauce goes well with pan-fried venison or duck breast.
