Ingredients for 1 servings:

  • 200 g pumpkin flesh, e.g. butternut, in cubes
  • 100 g brown sugar
  • 20 g fresh ginger
  • 2 tsp spice mix (pumpkin spice)
  • 20 ml water

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Vegan, ideal as a gift, e.g. for Pumpkin Spice Latte

Peel and grate the ginger. Cover and simmer the pumpkin with ginger, sugar, spices, and 2 tablespoons of water over medium heat for about 10 minutes until soft. Then puree everything with a hand blender or pass it through a fine sieve. While hot, pour into jars and seal. Makes a small jam jar, about 200 ml. Store in the refrigerator after opening. With coffee and (plant-based) milk, this makes a quick and delicious pumpkin spice latte. It can also be added to porridge or as a sweet spread. It makes a great gift or souvenir. About 450 kcal per serving.
