Fruity tomato chutney

Ingredients for 1 servings:

  • 1 ½ kg tomatoes, fully ripe
  • 100 g apricot(s), dried
  • 1 piece(s) of ginger root (approx. 3 cm)
  • 4 garlic cloves
  • 300 g sugar
  • 300 ml white wine vinegar
  • 1 tbsp salt
  • 1 tsp cayenne pepper

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 30 minutes

very tasty on hearty cheese or with grilled food

Blanch the tomatoes, peel them, and roughly chop them. Finely slice the apricots. Finely dice the ginger and garlic. Place the tomatoes and apricots in a wide, shallow saucepan. Stir in the sugar, vinegar, salt, and cayenne pepper and bring to a boil. Simmer uncovered over low heat for about 2 hours until thickened, stirring frequently. Pour into prepared jars and seal.
