Fruity tomato sauce

Ingredients for 8 servings:

  • 1 onion(s), finely chopped, possibly 2 onions
  • 1 tbsp olive oil
  • 1 clove(s) garlic, chopped
  • 3 gr. can/n tomatoes, peeled
  • 1 ½ tube(s) tomato paste
  • 1 tsp oregano
  • Thyme
  • salt and pepper
  • Sugar
  • 3 bay leaves

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

great with pasta, on pizza or in casseroles

Heat the oil in a large pot and sauté the onion and garlic. Add the tomatoes and tomato paste, crushing the tomatoes slightly with a wooden spoon. Add the spices and bay leaves, mix well, and bring to a simmer. Simmer on low heat for 4 hours, until the tomatoes are completely cooked, stirring frequently. It’s worth making larger batches of tomato sauce in advance and freezing it. It will also keep in jars in the refrigerator for several weeks.
