Fruity tomato sauce

Ingredients for 1 servings:

  • 3 tbsp olive oil
  • 1 clove(s) garlic
  • 1 onion(s), finely diced
  • 4 tomatoes, roughly diced
  • 1 tbsp tomato paste
  • 1 can of tomatoes (pizza tomatoes), peeled and chopped
  • 1 tsp oregano
  • 1 tbsp salt
  • ½ tbsp pepper
  • 1 pinch(s) of sugar

Instructions

Peel and score the garlic. Peel and finely dice the onions. Heat the olive oil in a pan. Meanwhile, wash the tomatoes, cut them into eighths, remove the cores, and roughly dice them. Add the garlic to the pan and sauté briefly, then remove. Add the finely diced onions to the pan. Sauté them for about 1 minute until translucent. Very important: now add the tomato paste and sweat it off. This will develop a delicate sweetness. Add salt to release the juices. Next add the diced tomatoes. Add the stock from the opened can of pizza tomatoes. Simmer everything for about 2 minutes. Now add the canned tomatoes and the oregano. Simmer everything over low heat for 20 minutes. Add a small pinch of sugar and puree everything with a hand blender until a paste forms. The perfect tomato sauce for pizza is ready. A quick tip: Pour the tomato sauce onto the pizza while it’s still cold.
