Ingredients for 2 servings:
- 200 g pasta
- 150 g mushrooms
- 150 g cucumber(s)
- 1 cup of sour cream, approx. 200 g
- olive oil
- Herbs, Italian
- curry powder
- Soy sauce
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Cut the mushrooms and cucumber into bite-sized pieces. Cook the noodles in salted water according to the package instructions. Meanwhile, heat olive oil in a pan and sauté the mushrooms, followed shortly by the cucumbers. When the mushrooms are almost cooked, add the sour cream and season with curry powder, herbs, and soy sauce. Add a little more pasta water to achieve the desired consistency. Drain the noodles, add them to the pan with the sauce, and mix well.
