Frying asparagus: Washing and peeling comes before cooking
You should first wash the asparagus spears well. Then you can be further processed.
- It is best to cut off the end pieces afterward. These are usually woody, depending on how high the asparagus was “poked” during harvest.
- With white asparagus, it is also important that you peel them after washing. The reason for this is the bitter substances in the peel. By the way, we will explain the difference between white and green asparagus in another article.
- Start peeling about a thumb’s width below the tender “head” of the asparagus. It is best to use an asparagus peeler to cut thin peels. This is not always possible with a knife.
- If you want to eat quickly or if you have visitors coming up, then cut the asparagus down the middle lengthwise. How to reduce the cooking time.
How to prepare asparagus in the pan
For frying, put a tasty oil in your pan. Grapeseed oil is just as suitable as olive oil. You can find out more about the shelf life of olive oil in another post on the topic of food and health.
- Once you’ve got the oil up to a medium temperature, drop the asparagus spears into the hot oil. It just shouldn’t be too hot. A temperature between 80 and 90 degrees is sufficient.
- Let the sticks fry for about ten to twelve minutes. Don’t forget to turn over the asparagus spears. This way you will cook faster and get a good color. If you’re using thinner bars, seven minutes is a good time.
- It is best to fry small pieces or half pieces. As already mentioned in the first section, the cooking time is then shorter.
- Incidentally, when it comes to the cooking time, it doesn’t matter whether you roast green or white asparagus.
For taste and health: The seasoning must not be missing
Pepper and salt are the classic asparagus spices.
- When roasting asparagus, be careful not to salt or pepper it before or during the roasting process.
- A little nutmeg, or a small sprig of rosemary when frying, does not hurt and can produce a slightly more varied taste.
- After frying, you can also add a little butter to the asparagus.
