Fry with light and dark sesame oil
Sesame oil can be made from roasted or unroasted sesame seeds. The main difference between the two variants is their taste:
- Light sesame oil is more common and is made from unroasted sesame seeds. It tastes rather mild and is particularly suitable for first attempts at cooking with the alternative oil.
- Dark sesame oil, on the other hand, is made from toasted sesame seeds. It has a much stronger flavor with a spicy sesame flavor. Dark sesame oil can be found primarily in Asian grocery stores. By the way: You can use roasted sesame in the kitchen on many other occasions.
- Sesame oil has a long shelf life and can still be used after a year without any problems.
This is important when frying with sesame oil
If you would like to try sesame oil for frying now, you should keep the following in mind:
- Dark sesame oil is less heat resistant than the light alternative. For frying or frying, you should therefore only use the oil made from unroasted sesame.
- It is best to combine sesame oil with neutral rapeseed oil when frying.
- However, you can easily add the more intense oil at the end to refine your dishes.
- In addition to frying, you can also use sesame oil in dressings – depending on your preference, the milder or the more intense flavor.
