Ingredients for 2 servings:
- 2 cups rice
- 2 slices of meatloaf
- 1 bell pepper(s), green
- 1 onion(s)
- 200 g cheese (Gouda or Edam) or your choice, grated
- oil
- oregano
- Thyme
- Paprika powder, hot
- Caraway, optional
- Salt
- pepper, black
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Cook the rice according to the package instructions. Finely dice the onion. Trim, wash, and dice the bell peppers. Cut the meatloaf into slightly larger cubes. Brown the diced onion, bell peppers, and coarsely diced meatloaf in a pan. Add the cooked rice. Season to taste with salt, pepper, a little paprika, and perhaps some caraway, oregano, and thyme (or other green herbs, if desired). Finally, sprinkle the grated cheese over the top and mix until the cheese is stringy.
