Gaby's potato soup with sausages

Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • 1 stalk(s) leek
  • 2 carrots
  • 1 tbsp oil
  • 4 tsp vegetable broth (instant)
  • 4 sausages (Wiener)
  • 1 sachet of mashed potato powder
  • Salt
  • pepper
  • nutmeg
  • 1.2 liters of water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the onions. Wash the leek and slice it into thin rings. Peel and slice the carrots. Heat the oil in a saucepan and sauté the onion, then the leek and carrots. Add 1.2 liters of water, bring to a boil, and stir in the broth. Simmer for about 10 minutes. Cut the sausages into diamond shapes. Stir the puree powder into the soup and add the sausages. Heat for 1-2 minutes, stirring continuously. Season the soup with salt, pepper, and nutmeg.
