Galloway loin in peanut butter and beer sauce

Ingredients for 4 servings:

  • 1 kg sirloin, from Galloway cattle
  • 1 onion(s)
  • 2 cloves garlic
  • 1 apple
  • 250 ml vegetable stock
  • 250 ml strong beer
  • 2 tbsp, heaped peanut butter
  • e.g. salt and pepper
  • n. B. sugar
  • 2 tbsp flour to thicken

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 35 minutes; Total time approx. 2 hours 5 minutes

Dice the onion, garlic, and apple. Sear the Galloway loin and then briefly remove from the pan. Sauté the onion, add the garlic, and then add the apple to the pan. Deglaze with the stout beer, stir in the vegetable stock, and bring to a boil. Stir in the peanut butter. Return the loin to the pot and braise with the lid closed for 75 minutes. Remove the loin from the pot and cut into slices approximately 2 cm thick. Purée the sauce in the pot and thicken with the flour. Season to taste with salt, sugar, and pepper. Return the meat and let it simmer in the sauce for a short while.
