Ingredients for 1 servings:

  • 1 tsp juniper berries
  • 1 tsp allspice berries
  • 2 tsp peppercorns
  • 3 carnations
  • 2 bay leaves, crushed
  • ½ cinnamon stick(s), broken

Instructions

Working time approx. 2 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 5 minutes

Measure the spices and lightly roast them without fat for about 2-3 minutes. Once cooled, either crush them in a mortar or pour them into a spice grinder. Rub them thoroughly into the venison. The mixture also goes well with goulash.
