delicious with grilled food or simply for dipping

Mix everything together to form a moist, shiny dough (approx. 5 minutes in a food processor, until the dough starts to pull away from the base). Let the dough rise for approx. 2 hours, folding it twice in between. Then place it on a greased round pizza pan and shape it flat (roll it out into a circle first). Put a little olive oil in a bowl, dip the handle of a spoon in it, and then make small holes in the bread dough. Sprinkle with coarse sea salt and Provençal herbs, if desired, and let the dough rise again on the pan (approx. 30 minutes). Meanwhile, preheat the oven to 250°C and bake the bread with steam for approx. 10-15 minutes.
