- 4 tbsp olive oil
- 700 g potatoes, cut into small, 5 mm thick slices
- salt and pepper
- Parsley, finely chopped

Portuguese potatoes
Heat the oil in a large skillet over medium heat. Add the potatoes and fry for about 15 minutes, until tender and golden brown, turning frequently to ensure even cooking. Season the potatoes with salt and pepper, drain on paper towels, and transfer to a warmed bowl. Sprinkle with parsley and serve immediately.
