Garlic puree

Ingredients for 1 servings:

  • 6 bulbs of garlic
  • 250 ml oil, neutral, e.g. B. rapeseed oil
  • ½ tsp sea salt

also ideal for preparing aioli

Peel the garlic and put it in the blender. Top up with oil and add salt. The oil makes it easier to puree. Puree the garlic thoroughly and fill the jars, which have been rinsed with hot water beforehand. Top up with a little oil, which can also be olive oil. This extends the shelf life. Refill with oil after each use. If you process olive oil in the blender, it can become slightly bitter. I like to use this puree in my aioli, for dips and sauces. The amount of garlic depends on how much you want to use. You can also make it with ginger, which is great for storing in Asian cuisine.
