Garlic seasoning paste

Ingredients for 1 servings:

  • 1 kg garlic
  • 200 g salt

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Peel the garlic and mince it with the salt or puree it in a food processor. Then fill the mixture into small jam jars and store in a dark place until ready to use. 1/2 teaspoon of the paste is roughly equivalent to one garlic clove. Gently salt the food, as garlic is very salty. The paste is a bright green when fresh. This is normal, though; it will turn yellow over time. This doesn’t affect the flavor. The paste will keep for about a year. Store opened jars in the refrigerator.
