Garlic spaghetti with tomatoes and parsley

Ingredients for 4 servings:

  • 500g spaghetti
  • 500 g tomatoes
  • 1 bunch of parsley
  • 5 cloves garlic
  • 1 chili pepper(s), red
  • 2 cubes of beef broth
  • 3 tbsp olive oil
  • possibly Parmesan
  • possibly salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the spaghetti according to the instructions until al dente. Wash and finely dice the tomatoes. Peel and finely chop the garlic. Finely chop the chili pepper. Tear and finely chop the parsley. Add the tomatoes, garlic, chili, and olive oil to a large pan. Bring slowly to a simmer. Once the tomatoes are soft, turn off the heat. Finely crumble the stock cubes and stir in. Add a little more of the pasta water if desired and season with salt and pepper to taste. Finally, stir in the parsley. Drain the pasta and stir it into the tomatoes. Plate up and serve sprinkled with Parmesan cheese, if desired.
